To celebrate the start of summer we've rustled up these delectable ice cream sandwiches. These heaven sent treats are perfectly served with a generous scoop of our Truly Chocolate Ice Cream sandwiched between them.
Using egg-white in place of butter, they’re light as a feather with a fluffy, meringue-like consistency. For an indulgent treat, sandwich them around a small scoop of our Truly Chocolate Ice Cream.

Cook Time: 12-15 minutes
500g Ground Almonds
250g Caster Sugar
2 Egg Whites
½ tsp salt
A few drops of vanilla essence
75g flaked almonds
12 small scoops of Jude’s Truly Chocolate Ice Cream
Preheat the oven to 180C, fan 160, gas 4.
In a large bowl mix the ground almonds, egg white, caster sugar, salt and vanilla essence until you have a thick, sticky paste.
Shape spoonfuls of the almond mixture into balls, roughly the size of a walnut, and place on a baking sheet. Flatten slightly before pressing in a scattering of flaked almonds.
Bake for 12-15 minutes, until pale and golden. Cool on tray before sandwiching with small scoops of ice cream. Eat immediately or freeze until required, remembering to remove from the freezer 10 minutes before eating.
